I’m lovin it…

And no I’m not talking about McDonald’s (though I’ve been known to down the 2 cheeseburger meal once or twice in my life… can I get an Amen Rebekah?)

In honor of trying to keep my thought-life positive and lovely, I thought I’d share a few things I love right now.

1. My husband

2. The changing leaves (even though we’ve hit the mid-80’s again this week… in October!?!)

3. Having fish-sticks in the freezer and a box of mac-n-cheese in the pantry for a quick, easy dinner on a busy weeknight… reminds me of when I was little and we’d have a babysitter and argue about who got the bigger portion of macaroni. πŸ™‚ Oh the simpler times.

4. Biggest Loser– New episode tonight!!

5. An upcoming 3-day weekend away with our best friends! We’re going to a beautiful cabin in the mountains of Copperhill, TN… thanks to some generous friends at church that offered their free log cabin for our getaway.

6. Free things (see above).

7. Jeff Henderson’s message at church yesterday and the song Candi Pearson-Shelton sang at the end. The sermon was so appropriate for the struggles facing our nation– it was all about how we spend so much of our lives trying to “project an image that is contrary to our real selves” and the good news is Jesus came for the real you, not the illusion of you, or the fake you.

8. Being halfway through the fall semester! Only 9 more weeks until Christmas break!

Delicious Chicken Soup Recipe

I’m home sick today– I’ve got a case of a sore throat and overall “blah” feeling, as well as sick of being behind on grading essays… So I’ve been resting and grading pretty much all day and am slowly starting to feel better and more caught up. I also finally had a chance to run to the grocery store and got the ingredients to try out a chicken soup recipe I found online this morning. It’s still heating and cooking in my lovely crock pot but I’ve snuck a few taste tests and it’s delicious!! I think the secret to this one is the dillweed (which I put in everything possible– tuna salad, chicken salad, dressings…). Anyways– it was super easy and quick, delicious, and there should be enough for leftovers! πŸ™‚ The jury is still out on whether or not Trey will like it (although he’ll pretend he does either way)… b/c there are some onions hidden in there. I swear– before I die I’m going to have converted Trey to an onion lover b/c I can’t bear to cook without it. Eventually he’ll either like them… or die of starvation??

Check out the recipe here. I used healthy request cream of chicken, low sodium broth, and fat free evap milk so it should be fairly healthy. I’m also going to serve it with some muenster, provolone, and cheddar grilled cheese sandwiches.

PS– My favorite show is coming back to NBC tonight– 2 hour premiere of the Biggest Loser: Families!! We’ll also be DVR’ing Wipeout on ABC. πŸ™‚

**UPDATE– The soup had a really good flavor, chicken was a bit over-cooked b/c it was in the crockpot for 4 hours. But I’m looking forward to a few days of leftovers πŸ™‚
